Ingredients

  • 300 g butter
  • 200 g raw cane sugar
  • 1 pinch salt
  • 1 tsp orange zest
  • 6 Eggs
  • 250 g whole wheat flour
  • 250 g type 405 wheat flour
  • 60 g ground almonds
  • 50 g cocoa powder
  • 4 tsp baking powder
  • 200 ml Milk (3.5% fat)
  • 150 g dark chocolate couverture (60% cocoa content)
  • 2 tbsp clarified butter
  • 30 g milk chocolate shavings (40% cocoa content)

Instructions

  1. 1.

Cream the butter with sugar, salt and orange zest. Beat in the eggs one at a time. Mix the flours with almonds, cocoa and baking powder. Alternately fold in the milk into the egg mixture.

  2. 2.

Pour the batter into the pan. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 60 minutes. Test with a skewer, remove from the oven, let cool in the pan for about 10 minutes, then transfer to a wire rack.

  3. 3.

Chop the dark chocolate into small pieces and melt over a hot water bath. Stir in the clarified butter. Spread the chocolate over the cake and garnish with chocolate shavings before serving.
