Noble Lemon Gin Cake

Ingredients
- 200 g butter
- 200 g sugar
- 4 eggs
- a pinch of salt
- 375 g flour
- 1.5 untreated lemons (zest and juice)
- 2 tsp Baking powder
- 180 ml milk
- 40 ml gin
- 300 g butter
- 175 g powdered sugar
- 5 egg yolks
- sugar flowers

Preheat the oven to 180°C (350°F) with upper and lower heat.

Beat the butter with the sugar until fluffy, then gradually fold in the eggs and a pinch of salt. Mix the flour with the lemon zest and baking powder, then alternately stir into the batter with the milk.

Pour the batter into a greased and floured springform pan, spread it evenly, and bake for 50-60 minutes, checking with a toothpick. Cover the surface with buttered parchment paper in time to prevent over-browning.

Remove the finished cake from the oven, let it cool, release it from the pan, and allow it to cool completely on a wire rack. Slice horizontally once, then drizzle gin over one layer.

For the buttercream, whisk the egg yolks with sugar over a hot, non-boiling water bath until frothy. Cream in the butter, then gradually fold in the lemon juice into the yolk mixture.

Spread one-third of the cream on one layer, place the second layer on top, and cover the entire cake with the remaining cream. Decorate with sugar flowers, chill for 3 hours, then garnish with a ribbon and candles before serving.
