Ingredients
- 600 g fresh eel (ready to cook, drained, 1 fresh eel)
- salt, freshly ground pepper
- a little flour
- 150 g breadcrumbs
- 1-2 cloves garlic
- 1 onion
- 2-3 sage sprigs
- 6 tbsp Olive oil
- 1 splash white wine

Cut the eel into portions. Season with salt and pepper. Lightly dust with flour and roll in breadcrumbs.

Peel the onion and garlic. Dice the onion finely, slice the garlic. Rinse the sage, shake dry, pat dry. Remove leaves from stems.

Heat olive oil. Brown the eel pieces all around. Add onion, garlic and sage and let them simmer together. Deglaze with white wine and let the eel cook in it for 5 minutes.
