Ingredients

  • 4 small zucchinis
  • 2 beef tomatoes
  • 4 tbsp olive oil
  • 1 clove garlic (finely chopped)
  • 1 tsp chopped thyme leaves
  • 1 pinch saffron powder
  • 350 g Penne

Instructions

    Wash zucchini, slice lengthwise into 2 mm thick rounds, then cut across into fine strips.

    Briefly blanch tomatoes, peel, quarter, core and dice. Heat olive oil in a pan and sauté garlic, add zucchini, sprinkle thyme and saffron. Briefly brown, stir in tomatoes and simmer for 2–3 minutes.

    Cook pasta in plenty of boiling salted water until al dente, then drain and set aside. Mix pasta with the vegetables and serve on plates.
