Chicken Skewers with Tomatoes

Ingredients
- 3 cloves garlic
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 untreated lime (including zest and juice)
- Cayenne pepper
- Salt
- 600 g chicken breast fillet or poultry breast fillet
- 4 cinnamon sticks
- 500 g tomatoes
- 3 sprigs thyme
- 3 tbsp olive oil
- 1 tbsp sugar
- 2 tsp saffron powder
- black pepper (ground)
- 3 tbsp butter

Peel the garlic. Mix honey, balsamic vinegar, lime zest and juice, cayenne pepper, and salt; press the garlic into the mixture.

Cut the chicken breast fillets into bite‑size cubes. Piercing each cube with a long, sharp knife and skewer onto cinnamon sticks. Place skewers in a bowl, drizzle with the marination, cover and let sit for about 20 minutes.

Wash the tomatoes. Rinse thyme sprigs, shake dry, strip leaves from stems.

Heat oil in a pot, add tomatoes, sprinkle sugar, and caramelize for 1‑2 minutes while stirring; remove from heat. Add thyme and saffron with 3–4 tbsp water to the pot and reduce briefly. Return tomatoes, season with salt and pepper.

Heat butter in a large pan and brown the skewers over low heat for about 5 minutes per side. Serve with the tomato sauce.
