Ingredients

  • 1 bunch spring onions
  • 1 red chili pepper
  • 100 g mango flesh
  • 2 tbsp maple syrup (30 g)
  • 2 tbsp Soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp Rice vinegar
  • 2 tbsp Cashews (30 g)
  • 400 g silken tofu (drained)

Instructions

    Clean and wash the spring onions, then slice into thin rings. Halve the chili pepper lengthwise, deseed, rinse, and chop. Dice the mango flesh into small cubes.

    Combine the spring onions, chili, mango with maple syrup, soy sauce, sesame oil, and rice vinegar in a bowl and mix well. Roast the cashews in a hot pan without oil over medium heat for 3 minutes until fragrant.
