Ingredients

  • 1 kg potatoes
  • 100 g wheat flour
  • 4 tbsp potato starch
  • 2 Eggs
  • Salt
  • flour (for dusting)
  • 3 tbsp butter
  • 150 g bacon cubes

Instructions

  1. 1.

Wash, peel, and boil the potatoes in plenty of salted water for 30 minutes until tender. Drain well and mash finely. Let cool slightly, then knead in the flour, potato starch, salt, and eggs thoroughly.

  2. 2.

Dust the work surface and your hands with flour. Shape walnut-sized balls from the dough, flatten them slightly, and press a small indentation in the center with your finger.

  3. 3.

Cook the dumplings in plenty of simmering salted water for about 5 minutes until they float to the surface. Remove them from the pot and drain well. Warm butter with bacon in a pan, toss the dumplings in it, lightly season with salt, arrange on a plate, and serve.
