Ingredients
- 4 tbsp apple jam
- 4 tbsp Lemon juice
- 1 pinch cayenne pepper
- 1.5 kg smoked pork ham roast (lightly smoked)
- 2 tbsp clarified butter
- orange slice
- green salad

Preheat the oven to 180°C with both top and bottom heat.

Warm the apple jam, then stir in lemon juice and cayenne pepper to make a glaze. Rinse the ham roast under cold water and pat dry; loosely tie it with kitchen twine. In a roasting pan, heat the clarified butter and brown the meat all over. Add about 200 ml of water. Brush the roast with some glaze and bake in the preheated oven for about 90 minutes, brushing with glaze repeatedly as needed. If necessary, add more water.

Let it cool, slice into portions, and garnish with rolled orange slices and salad as desired.
