Sicilian-Style Lemon Chicken

Ingredients
- 1 whole roasted chicken (pre-cooked, about 1.4 kg)
- 2 untreated lemons
- 1 tsp rosemary
- 0.5 tsp medium-hot mustard
- 2 tbsp soft butter
- Salt
- pepper (ground)
- 1 tbsp honey
- 1 tbsp sherry
- olive oil
Instructions

Preheat the oven to 200°C with upper and lower heat.

Wash the chicken, pat dry, and gently loosen the skin along the neck.

Heat one lemon, grate its zest; mix half of the zest with rosemary, mustard, and butter, season with salt and pepper, and slide under the chicken skin. Distribute evenly, reapply the skin, and season inside as well.

Tie the legs together with kitchen twine and cross the wings on the back.

Slice remaining lemons into thin rounds.

Place the chicken breast-side down in a heatproof dish and roast for about 1 hour. After half the time flip the chicken, add lemon slices, and drizzle occasionally with roasting fat.

Remove from oven. Whisk honey, sherry, remaining lemon zest, and oil; brush over the poultry and bake breast-side up at 250°C for about 5 minutes until crisp.

Plate the lemon chicken with lemon slices and serve.
