Ingredients

  • 12 sea trout fillets with skin (≈80 g each)
  • 4 tbsp balsamic vinegar
  • 3 tbsp honey
  • 1 tsp pesto rosso
  • a pinch chili peppers
  • Pepper
  • 2 Pak Choi
  • 1 onion
  • 2 tbsp balsamic vinegar
  • 1 tbsp oil
  • Salt
  • Pepper

Instructions

    Combine all ingredients for the marinate in a bowl, mix well and marinate or brush the fish fillets with it for at least 30 minutes.

    Peel and finely chop the onion. Wash, trim and slice the pak choi into strips. Heat the oil in a pan and sauté the onions until translucent; add the wet pak choi, stir until wilted, then add vinegar and set aside.

    Grill the fish fillets on a hot grill for 3–4 minutes per side. Plate the warm salad, place the grilled trout on top, and serve immediately.
