Sicilian Spinach

Sicilian spinach with pine nuts and sultanas: This low‑calorie starter already covers your daily vitamin A needs.

Ingredients

  • 400 g tender fresh spinach
  • 30 g sultanas
  • 3 Garlic cloves
  • 2 tbsp olive oil
  • 20 g pine nuts
  • Salt
  • Pepper
  • nutmeg
  • 1 Organic lemon

Instructions

    Wash the spinach and rinse it three times in cold water. Then spin dry thoroughly. Soak the sultanas in a little water. Peel and chop the garlic.

    Heat the oil in a pan and toast the pine nuts until lightly brown.

    Add the garlic to the pan and sauté briefly.

  4. 4.

    Add the spinach to the pan, tossing for 3–4 minutes.

  5. 5.

    Squeeze out excess liquid from the sultanas and add them to the spinach.

  6. 6.

    Season with salt, pepper, and a pinch of nutmeg. Transfer to a plate and let cool.

    Just before serving, rinse the lemon hot, dry it, and grate its zest over the spinach with a fine grater.
