Marinated Mackerel

Ingredients
- 4 pre‑cooked mackerels (deboned, gutted, headless)
- 5 white onions
- 10 bay leaves
- 1 untreated lemon (sliced)
- 2 tbsp juniper berries
- 3 lemons (including juice)
- pepper (coarsely ground from the mill)
- Salt
- 1 tbsp sugar
- 1 l water
- 4 Tbsp mayonnaise
- 2 tbsp coarse mustard
- 50 g black olives (pitted)

Peel onions and cut into rings. Cut each mackerel into 4 pieces. Bring water with bay leaves, juniper berries, sugar, salt and plenty of pepper to a boil. Add lemon juice, lemon slices and onion rings. Set aside. Place the mackerel pieces in the boiling liquid and let steep for 4–5 hours.

For the mustard sauce mix mustard with mayonnaise and chopped olives and serve over drained fish. Optionally add fresh tomatoes.
