Ingredients

  • 16 medium-sized raw shrimp (in shells, headless)
  • 1 Shallot
  • 3 tomatoes
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 1 chili pepper
  • Salt
  • ground pepper
  • 20 ml brandy
  • 1 tbsp mint

    Rinse the shrimp cold and pat dry. Peel and finely dice the shallot. Boil the tomatoes briefly, peel, quarter, seed, and dice them. Peel and mince the garlic.

    Heat olive oil in a pan over high heat and sear the shrimp for 30 seconds per side. Remove and keep warm in a baking dish. Sauté the shallot and garlic over medium heat until translucent; add the tomatoes and simmer. Stir in the chili pepper (seeded if desired), bring to a boil, season with salt and pepper. Spread the mixture over the shrimp. Drizzle with brandy and bake at 220°C (middle rack) for 8 minutes. Stir in mint and serve in small bowls.
