Baked Atlantic Halibut

Ingredients
- 800 g fish fillet e.g., Atlantic halibut (skinless)
- Salt
- Pepper
- 3 tbsp olive oil
- 400 g Mushrooms
- 1 Shallot
- 80 g white bread crumbs
- 1 egg yolk
- 1 tsp sharp mustard
- 1 tbsp melted butter
- 2 tbsp freshly chopped parsley

Rinse the fish, pat dry and cut into 8 roughly equal pieces. Season with salt and pepper and quickly sear both sides in a non‑stick pan with 1 tbsp oil until golden brown. Transfer to a parchment paper‑lined baking sheet.

Preheat the oven to 240 °C (464 °F) fan‑forced or conventional.

Clean the mushrooms and finely dice about 150 g; slice the rest thinly. Spread on a small tray, season, drizzle with 1–2 tbsp oil. Peel and finely dice the shallot. Sauté in 1 tbsp oil until translucent. Add mushroom cubes and cook 3–4 minutes until liquid evaporates. Remove from heat and cool slightly. Mix bread crumbs with egg yolk, mustard, butter, parsley and mushrooms. Season with salt and pepper and spread over fish fillets. Bake in the oven with mushroom slices for about 5 minutes until golden brown.
