Ingredients
- 250 g long-grain rice
- 0.5 bunch coriander
- 250 g mayonnaise
- 2 tbsp sweet chili sauce
- Salt
- Pepper (freshly ground)
- 600 g fish fillet (ready-to-cook, skinless, e.g., cod or haddock)
- 2 tbsp lemon juice
- 1 egg
- 100 g flour
- butterclarified oil
- 1 untreated lemon (cut into wedges)
Instructions

Cook the rice in 500 ml boiling salted water.

Rinse the coriander, pat dry, remove stems and finely chop. Mix the coriander with mayonnaise and sweet chili sauce, season to taste.

Wash the fish, pat dry, cut into strips, salt, pepper, drizzle with lemon juice, then coat first in beaten egg, then in flour. Fry in a hot pan with clarified butter until golden brown all around, drain on paper towels, and serve over rice. Garnish with lemon wedges and serve with the mayo.
