Shrimp with Spinach

The shrimp with spinach from Spoonsparrow are light, fresh and packed with protein!

Ingredients

  • 500 g shrimp
  • 2 tbsp olive oil
  • 600 g Spinach
  • 2 Garlic cloves
  • 1 Organic lemon
  • Pepper

Instructions

    Pat the shrimp dry. Heat 1 tbsp olive oil in a large pan over medium heat and fry the shrimp for 1–2 minutes on each side until pink. Remove and set aside.

    Meanwhile wash and spin-dry the spinach. Peel and finely chop the garlic. Add the remaining oil to the same pan, add the garlic and sauté for 2 minutes over medium heat. Add the spinach and cook for 1–2 minutes.

    While the shrimp is resting, wash and dry the lemon, grate its zest finely and squeeze out the juice. Return the shrimp to the pan, season with lemon juice, zest and pepper. Serve the shrimp with spinach on plates and enjoy.
