Zoodles with Salmon

The Zoodles with Salmon from Spoonsparrow are a true protein and nutrient powerhouse!

Ingredients

  • 2 zucchini (200 g each)
  • 1 Garlic clove
  • 1 handful parsley
  • 1 tbsp Olive Oil
  • 600 g salmon fillet
  • 0.5 Organic lemon
  • Salt
  • Pepper

Instructions

    Clean, wash, trim ends of zucchini and spiralize or julienne into fine strips. Peel and finely chop garlic. Wash parsley, shake dry, and finely chop leaves.

    Heat oil in a pan. Cook salmon fillet over medium heat 5–7 minutes per side until golden brown. Remove, let rest briefly, then break into large pieces.

    In the remaining oil, sauté garlic over medium heat for 30 seconds until translucent. Add zucchini noodles and cook while stirring 2–3 minutes until al dente.

    Gently fold in salmon pieces. Wash lemon hot, pat dry, grate zest finely, and squeeze juice. Add both to pan with three‑quarters of parsley; warm briefly without breaking the fish apart.

    Plate zoodles with salmon on dishes, sprinkle with salt, pepper, and remaining parsley, and serve immediately.
