- 2 ripe mangoes
- 1 Shallot
- 20 g fresh ginger
- 1 red chili pepper
- 1 EL sesame oil
- 5 EL coriander leaves
- 1 Lime (juice)
- 0.5 TL honey
- Salt
- 12 romaine lettuce leaves (for garnish)
- 500 g shrimp (peeled and deveined)
- 3 EL peanut oil

Peel the mangoes, separate the flesh from the pit, and dice into small cubes. Peel and finely chop the shallot and ginger. Wash the chili pepper, halve it lengthwise, remove the seeds, and mince the flesh. Heat the oil in a small pot and sauté the shallot with the ginger until translucent. Add the mango pieces and a splash of water, simmer for 10 minutes, then stir in the chili. Finely chop the coriander and add with lime juice. Season with honey and salt. Rinse, wash, and dry the lettuce leaves. Wash the shrimp, pat dry, season with salt and pepper, and sear in peanut oil on both sides for 3-4 minutes. Arrange on lettuce leaves with the salsa and serve.
