Baked Sardines with Potato Crust

Ingredients
- Olivenöl (for the pan)
- 800 g sardine (ready-to-cook without head and bones)
- Sea salt
- pepper (ground)
- 3 fresh garlic cloves
- 1 handful parsley
- 8 tomatoes
- 2 onions
- 1 tsp saffron (ground)
- 150 g waxy potatoes
- 2 tbsp olive oil

Preheat the oven to 180°C fan. Grease a baking dish with oil.

Rinse the sardines and pat dry. Season with salt and pepper, then arrange side by side in the dish. Peel and finely chop the garlic. Rinse the parsley, shake dry, pick off leaves and chop; set aside some for garnish, sprinkle the rest over the fish with the garlic. Boil the tomatoes briefly, cool, peel, quarter, deseed and dice. Peel the onions and slice into rings. Distribute both over the fish. Season with salt, saffron and pepper. Peel, wash and thinly slice or grate the potatoes. Arrange like roof tiles over the vegetables, season, drizzle with oil, cover with foil and bake for about 20 minutes. Remove the foil and brown further for about 10 minutes until cooked through. Sprinkle with remaining parsley before serving.
