Shrimp with Kale

The shrimp with kale from Spoonsparrow skillfully combine humble and refined ingredients.

Ingredients

  • 800 g kale
  • 2 red onions
  • 2 Garlic cloves
  • 2 tbsp peanut oil
  • 200 ml vegetable broth
  • 16 large shrimp (prepped, headless, shell removed, deveined)
  • 0.5 organic orange (zest)
  • 4 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp Honey
  • chili flakes
  • 25 g Sesame seeds (2 tbsp)

Instructions

    Clean and wash the kale; remove leaves from tough stems and roughly chop. Peel onions and garlic, halve the onions and cut into strips; finely mince the garlic. Heat 1 tbsp oil in a pan. Sauté onions and garlic for 3 minutes over medium heat. Add the kale and cook for 4 minutes. Pour in broth and steam for 5 minutes over medium heat.

    Meanwhile rinse shrimp and pat dry. Heat remaining oil in a pan. Cook shrimp for 2 minutes over high heat until golden brown.

    Combine shrimp with orange zest into the kale mixture, season with soy sauce, lime juice, honey, and chili flakes. Serve in bowls topped with sesame seeds.
