Pasta with Salmon and Kale Sauce

Ingredients
- 400 g Whole wheat penne
- Salt
- 350 g salmon fillet
- 1 lemon (juice)
- 600 g kale
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- 150 ml Vegetable broth
- 150 g cream cheese
- 100 ml heavy cream
- 30 g pine nuts
- Pepper
- 20 g Parmesan (block)

Cook pasta according to package instructions in boiling salted water until al dente.

Meanwhile rinse salmon under cold water, pat dry and cut into small pieces. Drizzle with 1–2 tbsp lemon juice.

Wash, trim, dry, and slice kale into strips. Peel and finely chop shallot and garlic. Heat oil in a large pan and sauté shallot and garlic over medium heat until translucent. Add kale, cook for 1–2 minutes, then deglaze with broth. Stir in cream cheese, heavy cream, and salmon; let simmer for about 3 minutes. Fold in pine nuts and season sauce with salt, pepper, and lemon juice.

Drain pasta and set aside. Toss with the sauce and divide among four plates. Grate Parmesan over each serving.
