Shrimp with Broccoli

Ingredients

  • 2 cloves garlic
  • 10 g ginger (1 piece)
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 head broccoli
  • 1 bunch scallions
  • 2 tbsp Vegetable oil
  • 500 g shrimp (peeled and deveined)
  • Salt
  • Pepper
  • 300 ml Vegetable broth
  • 100 ml dry white wine

Instructions

    Peel the garlic and finely dice it. Peel the ginger and grate it finely.

    Wash the bell peppers, pat them dry, halve them, remove seeds and white membranes, cut into 2 mm wide strips. Wash the broccoli and divide into florets. Wash the scallions, shake off excess water and slice into slanted very thin rings.

    Heat oil in a pan and sauté garlic and ginger for 1–2 minutes over medium heat. Add shrimp, season with salt and pepper, and cook for 3–4 minutes. Remove and set aside.

    Add remaining vegetables to the pan and deglaze with vegetable broth and white wine. Simmer for 7–10 minutes, return the shrimp mixture and let it steam for 2 more minutes over low heat. Plate on four preheated plates and serve.
