Ingredients
- 500 g broccoli stalks
- 500 g chicken breast fillet
- 50 g small onions (1 small onion)
- 2 Garlic cloves
- 20 g Ginger
- 60 g scallions (2 scallions)
- 4 tbsp dark sesame oil
- 50 g cashew nuts
- 1 dried chili pepper
- 1 tsp coriander seeds
- 0.5 tsp black peppercorns
- 1 tsp hot curry powder
- 300 ml poultry broth
- 1 tbsp soy sauce

Clean and wash broccoli stalks. Rinse chicken breast, pat dry, and cut into strips. Peel and finely dice onion, garlic, and ginger. Clean scallions, wash, and slice diagonally into rings.

Heat oil in a large pan or wok. Sauté onions, garlic, and ginger for about 5 minutes over medium heat. Add cashew nuts and cook on low heat for 1–2 minutes.

Crush chili, coriander seeds, and peppercorns in a mortar and add to the pan. Add chicken strips, scallions, and broccoli stalks; sauté over medium heat for 3 minutes. Add curry powder and broth. Cook everything for 5–7 minutes over high heat, stirring frequently. Finish with soy sauce and serve.
