Chicken Breast Stuffed with Spinach, Mozzarella and Sun-Dried Tomatoes

Ingredients

  • 4 chicken breast fillets
  • 200 g young spinach
  • 80 g mozzarella
  • 2 sun‑dried tomatoes (in oil)
  • butter
  • extra virgin olive oil
  • 1 tbsp Lemon Juice
  • freshly ground pepper
  • Salt

Instructions

    Wash the chicken breast fillets under running cold water and pat dry with paper towels. With a sharp knife cut a pocket into each fillet.

    Wash the spinach and dehydrate it in a pot over medium heat until wilted, then drain well. Chop finely and season with salt and pepper. Drain the mozzarella and dice into small cubes. Drain the sun‑dried tomatoes and slice into thin strips. Stuff each fillet with the spinach, mozzarella and tomatoes, securing with a wooden toothpick. Season the outside with salt and pepper.

    Heat 2 tbsp butter and 2 tbsp olive oil in a large skillet over medium heat. Brown the fillets on both sides until golden yellow. Add the lemon juice, reduce the heat, cover and simmer for 15 minutes to finish cooking. Slice the stuffed fillets in half and serve with fresh salad if desired.
