Shrimp Temaki

Ingredients
- 100 g shrimp (pre-cooked, ready-to-use)
- 3 tbsp Mirin (Japanese cooking wine)
- 50 g cucumber salad
- 2 Spring Onions
- 4 stalks coriander
- 3 tbsp mayonnaise
- 1 tsp light soy sauce
- 150 g cooked sushi rice
- vinegar water
- 2 roasted nori sheets
- 1 tsp wasabi paste
Instructions

Marinate the shrimp in mirin and let them soak.

Wash the cucumber, cut into strips about 7 cm long and 5 mm wide. Wash the spring onions, trim and cut into strips about 7 cm long, optionally halve lengthwise.

Wash coriander, shake dry and pluck leaves.

Whisk mayonnaise with soy sauce.

With hands dampened in vinegar water, shape four rice balls from the sushi rice.

Cut nori sheets lengthwise; take one sheet with smooth side down in the left hand. Place a rice ball on the upper half, spread a little wasabi paste. Add cucumber strips, spring onions, coriander leaves, drained shrimp and mayonnaise, press firmly and roll the nori like a bag.
