Shrimp Skewers with Paprika Sauce

Ingredients
- 3 cloves garlic
- 1 onion
- 2 red bell peppers
- 8 tbsp olive oil
- 150 ml instant vegetable broth
- 1 yellow bell pepper
- 500 g frozen jumbo shrimp (headless, peeled, thawed)
- 1 bunch flat-leaf parsley
- Salt
- Pepper
- 1 tbsp Lemon Juice
- 1 tbsp Fresh thyme leaves
- Cayenne pepper

Peel and finely dice one clove of garlic and the onion. Quarter the red bell peppers, clean, rinse, and dice them small. Heat 3 tbsp olive oil. Sauté onion, garlic, and red peppers. Add broth and simmer covered for 10 minutes.

Quarter the yellow pepper, clean, rinse. Slice into strips. Rinse shrimp and pat dry. Thread shrimp onto lightly oiled skewers. Season with salt and pepper. Heat remaining olive oil and sear skewers about 2 minutes per side. Wash parsley, shake dry, then chop leaves. Peel remaining garlic and slice thinly. Add garlic and parsley to skewers and sauté briefly. Finish with lemon juice.

Blend the cooked red peppers in broth, season heavily with salt, thyme, and cayenne pepper. Briefly simmer yellow pepper strips in sauce. Serve sauce over skewers.
