Baked Sea Bass on Potato Vegetables

Ingredients

  • 600 g mostly waxy potatoes (cooked the day before)
  • 2 small bell pepper caps
  • 4 Spring Onions
  • 1 small onion
  • 100 ml olive oil
  • 1 lemon (juice)
  • 0.5 tsp paprika powder (sweet)
  • Salt
  • Pepper (freshly ground)
  • a handful of thyme
  • 4 pre‑cooked sea bass fillets (about 350 g each)

Instructions

    Preheat the oven to 200°C with upper and lower heat.

    Peel the potatoes and slice them thinly. Wash the peppers, halve them lengthwise, clean, and cut into thin strips. Wash the spring onions, trim, and cut diagonally into rings. Peel the onion and slice finely. Mix the olive oil with lemon juice, paprika, salt, and pepper in a bowl.

    Rinse the sea bass fillets inside and out, pat dry, brush with the seasoned oil, and place in four small baking dishes or on a deep baking tray. Toss the vegetables with remaining oil and spread around the fish. Sprinkle the leftover thyme over everything and bake for 25–30 minutes.
