Shrimp Tails with Feta Sauce

Ingredients
- 3 tomatoes
- 3 spring onions
- olive oil
- 200 ml vegetable broth
- 150 g sheep cheese
- 250 ml Whipping Cream
- Salt
- Pepper (freshly ground)
- Lemon juice
- 600 g jumbo shrimp (prepped, peeled and deveined)
- 1 untreated lemon (cut into wedges)
- mint (for garnish)

Blanch the tomatoes, cool, peel, quarter, seed, and finely dice. Rinse the spring onions, trim, and slice into thin rings.

Heat 1 tablespoon oil in a pan and sauté the spring onions. Add the tomatoes, pour in the broth, and reduce to one-third. Mash the sheep cheese with a fork, stir in the cream, and combine with the tomato mixture. Season with salt, pepper, and a splash of lemon juice; fold in mint and remove from heat.

Wash the shrimp, pat dry, season with salt and pepper, and sear in a hot pan with oil for 2–3 minutes on each side. Place them in the sauce, let rest briefly, then serve plated with lemon wedges and mint leaves.
