Shrimp Skewers with Mediterranean Vegetables

Ingredients

  • 8 peeled large shrimp
  • 2 Garlic cloves
  • 1 Red Onion
  • 1 small zucchini
  • 4 small artichokes
  • 4 tbsp olive oil
  • 2 tbsp parsley (finely chopped)
  • 2 tbsp lemon juice
  • Salt
  • pepper (from grinder)

Instructions

    Halve the shrimp lengthwise and remove the vein. Peel and quarter the garlic. Peel and cut the onion into eight long pieces. Wash, trim, and cut the zucchini into bite-sized pieces. Alternate the ingredients on four wooden skewers. Break off the stems of the artichokes, peel the leaves up to the base, remove the fluff, and trim the leaf bases. Slice the artichoke hearts thinly and immediately mix with 1 tbsp lemon juice. Heat olive oil in a large pan and fry the shrimp skewers and artichoke slices for about 5 minutes.

    Mix parsley and lemon juice over the artichokes and skewers. Season with salt and pepper.
