Ingredients

  • 12 large shrimp
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp Lemon Juice
  • 20 g parsley
  • 1 cucumber
  • 4 tomatoes
  • Salt
  • Pepper
  • 4 tbsp white balsamic vinegar
  • 2 tbsp olive oil
  • 12 skewers
  • 1 lemon (cut into 8 wedges)

Instructions

    Clean the large shrimp, remove the head, peel only the tail segment, carefully remove the vein, rinse and pat dry. Thread the shrimp lengthwise onto skewers. Peel the garlic cloves, blend with oil and lemon juice, coat the shrimp, and marinate for about 30 minutes.

    Meanwhile, peel the cucumber, halve it lengthwise, scrape out the seeds, dice the flesh. Wash the tomatoes, halve them, remove the core, and dice. Wash the parsley, shake dry, and pluck the leaves.

    For the dressing, mix oil with balsamic vinegar, salt, and pepper. Combine cucumbers, tomatoes, and parsley, add the dressing, stir, taste, and divide the salad into 4 bowls. Grill the skewers on a hot grill for 2–3 minutes all around, serve together with the salad and lemon wedges.
