Ingredients

  • 300 g peas
  • Salt
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • Pepper
  • 2 Eggs
  • 50 g grated Parmesan
  • 200 g mascarpone
  • 8 sesame grissini (for serving)
  • grated Parmesan (for sprinkling)

Instructions

    Blanch the peas in salted water for about 5 minutes. Rinse, drain well and mix with lemon juice and oil. Season with salt and pepper.

    Separate the eggs; beat the whites with a pinch of salt until stiff peaks form. Whisk the yolks with parmesan and mascarpone until smooth. Fold in the egg white mixture and season with salt and pepper.

    Crush the grissini and distribute into 4 glasses. Add the peas (except for 1 tbsp) on top and spoon the cream over them. Chill for at least 2 hours.

    Before serving, sprinkle grated parmesan and garnish with remaining peas.

    Serve with additional grissini if desired.
