Ingredients

  • 400 g Carrots
  • 500 g white asparagus
  • 2 Spring Onions
  • juice of one lemon
  • salt, pepper
  • 3 tbsp nut oil
  • 100 g lentil sprouts

Instructions

    Peel and finely grate the carrots. Peel the asparagus and cut off the ends generously. Slice the asparagus diagonally into very thin slices. Clean the spring onions, rinse them and cut into fine strips.

    Mix lemon juice with salt, pepper and nut oil. Add about half of this mixture to the grated carrots. Arrange the carrots with asparagus, spring onions and sprouts on a plate and drizzle with the remaining vinaigrette.
