Shrimp Skewers

Ingredients
- 1 orange (unprocessed)
- 50 g fresh ginger
- 1 tbsp pickled green pepper (from jar)
- coriander
- 8 tbsp olive oil
- 16 shallots
- 16 large shrimp (raw, with shell)
- Salt

Wash the orange hot and pat dry. Thinly peel the rind with a vegetable peeler. Peel the ginger and slice thinly. Lightly crush the green pepper. Rinse the coriander, shake dry and pluck the leaves from the stems. Combine all with olive oil in a bowl.

Peel the shallots and cut them in half or quarters depending on size. Break the shrimp off the tail end of the shell. Carefully slit the shrimp back and remove the vein. Rinse the shrimp and pat dry.

Lightly oil wooden skewers. Alternate threading shrimp and shallots onto them.

Place the skewers with prepared ingredients on a baking sheet (or shallow dish). Spoon the marinate over them. Marinate in the refrigerator for 1 hour, turning the shrimp 2–3 times during this time.

Place the shrimp on a hot grill and cook each side for 2 minutes. Salt only after grilling.
