Ingredients
- 2 shallots
- 50 g butter
- 60 g flour
- 250 ml milk
- 750 ml vegetable broth
- 150 g crème fraîche
- 40 g crab butter
- 150 g shrimp (pre-cooked and peeled)
- Salt
- black pepper (freshly ground)
- Cayenne pepper

Peel and finely dice the shallots. Heat the butter, then sauté the shallots until golden yellow. Add the flour and cook over low heat until lightly browned. Gradually whisk in the milk and broth with a whisk until it boils. Stir in the crème fraîche and simmer gently for 10 minutes over low heat, stirring occasionally.

Add the cold crab butter and let the shrimp warm through in the sauce, seasoning with salt, pepper, and cayenne pepper.
