Ingredients

  • 350 g fresh snow peas
  • Salt
  • 2 ripe mangoes
  • 2 red chili peppers
  • 600 g shrimp (peeled and deveined)
  • black pepper (ground)
  • 4 tbsp Vegetable oil
  • 2 tbsp lemon juice

Instructions

    Wash the snow peas, snap off the ends, and blanch them in boiling salted water for 2-3 minutes. Remove, shock in cold water, and drain well. Peel the mangoes, cut along the pit, and dice into bite‑sized pieces.

    Wash the chilies and slice into rings. Pat the shrimp dry and sear briefly in a hot pan with oil until golden‑yellow on each side. Season with salt and pepper.

    Combine snow peas, mango, and chili rings; season with oil, lemon juice, salt, and pepper. Fold in the shrimp, arrange on a bowl, and serve.
