Ingredients

  • 300 ml Vegetable broth
  • 200 g bulgur
  • 4 chicken breast fillets (about 120 g each)
  • 3 tbsp olive oil
  • ras el-hanout
  • Salt
  • 250 g green beans
  • 1 Garlic clove
  • 50 g chopped almonds
  • 100 g black olives (pitted)

Instructions

    Bring the broth to a boil, stir in the bulgur and let it soak for about 30 minutes. Then fluff with a fork and allow to cool.

    Preheat the oven to grill mode.

    Rinse the chicken breasts and pat them dry. Mix the oil with Ras el-Hanout and salt, then brush this mixture over the chicken breasts. Grill in the oven for about 15 minutes, turning occasionally.

    Wash and trim the beans; depending on size cut in half or thirds and blanch in salted water for about 5 minutes. Drain and let them dry. Peel and finely chop the garlic. Sauté together with the almonds and beans in 1–2 tbsp hot oil. Chop the olives and mix them with the beans into the warm bulgur. Season with salt and pepper.

    Slice the grilled chicken breasts and arrange on top of the bulgur salad to serve.
