Shrimp Salad with Avocado, Peanuts and Red Onion

Ingredients

  • 1 red chili pepper
  • 1 ripe Avocado
  • 1 ripe papaya
  • 2 tbsp lemon juice
  • 1 Red Onion
  • 50 g unsalted peanuts
  • 400 g Chinese cabbage
  • 250 g pre-cooked shrimp
  • Salt
  • white pepper
  • 2 tbsp butter
  • 1 Orange (juice)
  • 2 tbsp rice vinegar
  • 4 tbsp sesame oil

Instructions

    Wash the chili pepper, cut it lengthwise in half, remove the seeds and finely chop the flesh. Peel and pit the avocado and papaya, then slice into strips. Drizzle with lemon juice. Peel the onion and slice into thin rings. Roughly chop the peanuts and briefly toast them in a dry pan without oil. Clean the Chinese cabbage, wash it, trim the core and cut into fine strips.

    Season the shrimp with salt and pepper and sauté them in hot butter for 2 minutes, deglazing with orange juice. Combine the chili pepper with the Chinese cabbage, peanuts, onions, avocado and papaya slices; fold in the shrimp with the juice and season with vinegar, sesame oil, salt and pepper.
