Ingredients

  • 1 bunch arugula
  • 2 tbsp pickled capers
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 red bell pepper
  • 2 small tomatoes
  • salt, pepper (freshly ground)
  • 300 g fresh shrimp (pre-cooked and ready to use)
  • 2 tbsp olive oil (for frying)

Instructions

    Wash the arugula, drain it, trim the stems slightly and halve the leaves.

    Wash the bell pepper, remove the stem area, cut in half, discard seeds and thinly slice the flesh into fine strips. Wash tomatoes and quarter them.

    Make a vinaigrette from oil, vinegar, capers, salt and pepper. Quickly sear the shrimp in hot oil all around. Let cool briefly.

    Combine arugula with tomatoes, bell pepper strips and shrimp, divide onto four small plates, drizzle with vinaigrette and serve as an appetizer.
