Shrimp Pasta

Ingredients

  • 300 g pasta
  • Salt
  • 300 g shrimp
  • 2 tbsp lemon juice
  • 2 small zucchini
  • 2 red bell peppers
  • 2 thin stalks leeks
  • 2 Garlic cloves
  • 1 piece ginger (walnut-sized)
  • 2 tbsp olive oil
  • 1 red chili pepper
  • 2 tbsp chopped parsley

Instructions

    Rinse the shrimp, drizzle with lemon juice and set aside in a bowl.

    Wash the zucchini and slice or julienne. Wash the bell peppers, deseed, remove white membranes, and dice finely. Clean the leeks, wash, and finely chop. Peel and dice the garlic and ginger.

    Heat the oil in a (non-stick) pan, briefly sauté the garlic and ginger cubes, then add the bell pepper, zucchini, and leek; stir-fry briefly, pour in 1/2 cup water, cover, and steam for 5 minutes over medium heat.

    Cook the pasta in plenty of boiling salted water until al dente, then drain in a colander.

    Meanwhile wash the chili pepper, slit lengthwise, deseed, and dice finely. Add the shrimp to the pan, season with salt, add the chili, and stir-fry for 2–3 minutes. Combine the pasta, vegetables, parsley, and shrimp, and serve immediately on warmed plates.
