Shrimp on Savoy Cabbage

Ingredients
- 1 onion
- 3 Tbsp plant oil
- powdered sugar (for dusting)
- 150 ml dry red wine
- 2 tbsp balsamic vinegar
- 200 g savoy cabbage
- Salt
- 1 tbsp butter
- 100 ml whipping cream
- Salt
- pepper (ground)
- 8 large shrimp (deveined and peeled except for the tail segment)
Instructions

Peel and finely dice the onion. Sauté in 1 tbsp hot oil until translucent, then deglaze with red wine and balsamic vinegar. Reduce by half and strain through a sieve.

Wash, trim, and cut the savoy cabbage into fine strips. Blanch briefly in salted water, shock in ice water, and drain. Sauté in hot butter for 1-2 minutes, pour in cream, and simmer for a few minutes. Season with salt and pepper.

Rinse the shrimp, pat dry, and split them in half at the tail. Fry in remaining oil for 1-2 minutes, seasoning with salt and pepper.

Arrange on the savoy cabbage in bowls, drizzle with the red wine reduction, and serve.
