Baked Artichokes with Garlic Shrimp

Ingredients
- 4 small artichokes
- juice of 1 lemon
- Salt
- Pepper (freshly ground)
- 200 g large shrimp (prepped)
- 2 cloves garlic
- 0.5 tsp Coriander seeds
- 0.125 l olive oil
- juice of 1 lemon
- 1 lemon (unpeeled, cut into wedges)
Instructions

Peel the garlic and press it through a press, mix with crushed coriander, salt, pepper, lemon juice and olive oil. Pour over the shrimp and let marinate for 30 minutes.

Remove stems from artichokes and discard outer woody leaves; rinse well. Trim leaf tips of remaining leaves with kitchen scissors. Halve or quarter artichokes lengthwise and drizzle cut surfaces with lemon juice.

Place artichokes on an oiled baking sheet, cover with foil and bake in a preheated oven at 200°C for about 25 minutes. Remove foil, turn on grill, add shrimp and grill for another ~5 minutes.

Arrange shrimp with artichokes and lemon wedges on plates.
