Shrimp-Mango Skewers

Ingredients
- 400 g ripe mango
- 2 bunches spring onions
- 1 bunch chervil
- 150 g wild rice mix
- 16 pre-cooked medium shrimp
- juice of one lemon
- 6 tbsp Olive oil
- salt, pepper
- 1 tbsp Mild curry powder
- 4 skewer sticks

Peel the mango and cut the flesh into 2 x 2 cm cubes. Clean the spring onions and cut them into 3 cm long pieces. Wash the chervil, dry it, pluck off the leaves, and finely chop. Cook the wild rice according to package instructions.

Whisk lemon juice with 3 tbsp oil, chervil, salt, curry and pepper until smooth. Thread shrimp, mango cubes and spring onions alternately onto skewers, brush with the sauce and marinate for 30 minutes.

Heat remaining oil in a large pan. Fry the skewers in batches over medium heat for 5 minutes on all sides. Arrange the skewers on plates, serve with wild rice and drizzle with leftover sauce.
