Baked Chicken Thighs

Ingredients

  • 8 chicken drumsticks
  • 1 tbsp oil
  • 1 clove garlic
  • 1 tbsp Maple Syrup
  • 2 tbsp Soy sauce
  • 1 tbsp tomato purée
  • 1 tsp freshly grated ginger
  • 250 g sweet potatoes (cooked and pressed through a potato masher)
  • 100 g flour
  • 175 g corn (canned)
  • 1 egg
  • Salt
  • freshly ground pepper
  • oil (for frying)

Instructions

    Score the skin of the thighs with a sharp knife and place them in a shallow bowl.

    Mix oil, pressed garlic, syrup, soy sauce, ginger, and tomato purée; pour over the thighs and marinate for about 2 hours.

    Place the chicken thighs on a baking tray and bake in a preheated oven at 200°C for about 30 minutes until golden brown.

  4. 4.

    Combine the mashed potatoes with flour, drained corn, egg, salt, and pepper; form small round flat discs by hand and fry in a little oil until both sides are golden brown. Drain on kitchen paper and serve with the baked chicken thighs.
