Shrimp Kokos Curry

Ingredients
- 600 g shrimp (peeled, deveined)
- 2 cloves garlic
- 400 g plum tomato
- 1 tbsp ghee
- 1 tbsp Garam Masala (spicy variety)
- 300 ml coconut milk
- 100 ml fish stock
- 2 tbsp honey
- 2 tbsp vinegar
- Cayenne pepper
- Salt
- 1 tbsp chopped coriander

Peel and finely chop the garlic. Briefly blanch the tomatoes, cool, peel, quarter, deseed and dice them. Heat ghee in a pan and briefly fry the garam masala. Add the garlic and cook with it. Deglaze with fish stock. Bring to a boil and add coconut milk. Simmer over low heat for about 2 minutes.

Add the shrimp and tomatoes, season with honey, vinegar, salt and cayenne pepper, cover and simmer on low heat for about 2-3 minutes until the shrimp are cooked. Serve sprinkled with coriander.
