Ingredients

  • 120 g rice flour
  • 1 tsp turmeric
  • 1 egg yolk
  • 1 tsp freshly chopped parsley
  • Sea salt
  • 16 shrimp (prepped except tail segment peeled and deveined)
  • handful of lamb's lettuce
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • oil for frying
  • lemon zest

Instructions

    Whisk the flour with about 175 ml cold water, turmeric, and egg yolk into a smooth batter. Fold in parsley and a pinch of salt, cover, and chill for about 30 minutes.

    Wash and pat dry the shrimp.

    Rinse and trim the lamb's lettuce, then drizzle with olive oil and lemon juice, seasoning with salt. Toss the lettuce with dressing. Dip each shrimp into the batter. Fry in hot oil for about 2 minutes until golden brown; drain on paper towels.

    Combine the dressed lettuce with the fried shrimp on plates.

    Garnish with lemon zest and serve with dips of choice.
