Shrimp in Garlic Oil

Ingredients

  • 16 large shrimp
  • 4 tbsp flour
  • 1 chili pepper
  • 2 cloves garlic
  • 1 lemon
  • 1 sprig rosemary
  • 4 sprigs thyme
  • 6 tbsp Olive oil
  • 2 Zucchini
  • Salt
  • ground black pepper

Instructions

    1. Peel the shrimp except for the tail segment, remove the gut and wash thoroughly.

    2. Wash the chili pepper, halve it lengthwise and remove the seeds.

    3. Slice the chili into thin strips.

    4. Peel the garlic and slice it thinly.

    5. Slice the lemon.

    6. Roughly tear the herbs, wash them and let drain on kitchen paper.

    7. Add 4 tbsp olive oil to a hot pan.

    8. Briefly sauté the herbs, chili and garlic until fragrant.

    9. Remove the aromatics but leave the oil in the pan.

    10. Season the shrimp with salt and pepper, coat in flour, tap off excess flour and place in the hot oil. Fry each side about 1–2 minutes until golden brown. Finally add lemon juice and return the sautéed herbs, garlic and chili to the pan.

    11. Wash the zucchini and slice it. In a separate pan fry in the remaining oil on both sides until golden brown, season with salt and pepper and serve with the shrimp.
