Pancakes with Shrimp and Saffron Mayonnaise

- 2 egg yolks
- 1 tsp sharp mustard
- Salt

- 200 ml olive oil
- 1 tsp lemon juice
- 150 g flour
- a pinch of salt
- 1 tsp Baking powder
- 1 whole egg
- 150 ml milk
- butter (for frying)
- 4 shrimp
- 2 tbsp olive oil
- Salt
- pepper (ground)

Whisk the egg yolks, mustard, a pinch of salt and pepper in a large bowl until pale and creamy. Add the oil dropwise at first, then slowly while continuously whisking. Ensure each addition is fully incorporated before adding more. Finally stir in lemon juice and saffron, seasoning with salt.

Combine flour, salt, baking powder, egg, and milk into a smooth batter, adjusting milk if needed. Fry 4 pancakes in hot butter, cooking about 2 minutes per side until golden brown.

Cook the shrimp in hot oil for about 2 minutes, season with salt and pepper, then fill the pancakes with the shrimp and mayonnaise. Garnish with chives and serve.
