Ingredients

  • 2 chicken breast fillets
  • 1 Garlic clove
  • 2 tbsp red curry paste
  • 250 g shrimp (pre‑shucked, frozen)
  • 50 g breadcrumbs
  • 200 g canned corn
  • 4 Spring Onions
  • 2 tbsp chopped coriander
  • 1 red chili pepper
  • 2 tbsp oil
  • 6 tbsp sweet chili sauce
  • 4 tbsp Lemon juice
  • 1 tbsp soy sauce
  • 1 tbsp chopped coriander
  • 1 tbsp chopped mint
  • 1 tbsp finely diced fresh ginger
  • 1 finely chopped spring onion
  • 1 tbsp honey

Instructions

    Combine the sauce ingredients in a bowl, mix well and let rest. (As long as possible! Can also be prepared the day before.)

    Process the chicken meat with the shrimp through a meat grinder for the patties. Finely chop the drained corn and add it. Peel the garlic clove, press it into the mixture and combine with the remaining ingredients except the oil to form a dough. Divide this into 18 portions and shape small patties.

    Heat the oil in a non‑stick pan and brown the patties on each side for about 3 minutes. Arrange them on a plate and serve with the sauce.
