Shrimp Beef Fillets and Roastbeef Rolls

Ingredients
- 4 Chateaubriand (double thick beef fillets from the midsection)
- 3 tbsp oil
- Salt
- pepper (ground)
- 8 large shrimp
- 8 slices pink roasted roastbeef (from the butcher)
- 30 g dark chocolate (80% cocoa content)
- 4 long snipped beans

Tie the meat with kitchen twine in a bundle shape.

Cook the beans in boiling salted water for 10 minutes, drain, rinse, pat dry and cut each lengthwise in half.

Heat 2 tbsp oil in an ovenproof pan and sear the meat all around. Remove from heat, season with salt and pepper, then bake in preheated oven at 200°C for about 5 minutes to finish.

Meanwhile wash the shrimp, pat dry and brown them in the remaining oil for 4-5 minutes.

Melt chopped chocolate over a water bath. Roll roastbeef slices, bind each with a bean half and briefly dip the ends of the rolls into the chocolate.

For serving cut the medallions crosswise. Place one shrimp on each lower half. In the upper half pierce diagonally with a sharp knife and insert another shrimp (remove heads if desired), then place on the lower half. Arrange with the roastbeef rolls.
