Baked Beef and Vegetable Mix with Mashed Potatoes

Ingredients
- 500 g beef (e.g., sirloin, rump)
- 2 EL oil
- 1 EL starch
- 200 ml vegetable broth
- 2 Spring Onions
- 400 g Broccoli
- 400 g corn (canned)
- 1 red bell pepper
- 500 g Potatoes
- 120 ml milk
- 2 EL Butter
- 1 EL parsley (chopped)
- Salt
- chili flakes
- pepper (ground)

Wash potatoes and steam for about 30 minutes.

Wash beef and pat dry.

Wash spring onions and cut into rings.

Cut broccoli florets from the stem, clean the stem and chop into pieces.

Wash bell pepper, halve, deseed and finely dice.

Brown beef in hot oil on all sides, deglaze with 180 ml broth. Add broccoli, corn, spring onions and bell pepper, simmer for about 5 minutes. Then whisk starch with remaining broth and stir in. Season with salt and pepper. Transfer to a baking dish.

Peel potatoes, mash through a potato masher, mix with hot milk and cold butter. Fold in parsley and chili flakes, season with salt. Dollop over the vegetable-beef mixture and bake in a preheated oven at 200°C (fan) for about 10 minutes.
